Garlic Lime Chicken Fajitas

Last night I was kind of at a loss as to what to make for dinner, since we didn’t have much in the house, but then I remembered that I had a package of garlic lime fajita spices in the pantry (pre-measured and pre-packaged separately, including: cumin, minced onion, minced garlic, coarse black pepper, oregano, and cilantro). After Tom defrosted, washed, and cut-up the chicken (doing this is a pet peeve of mine, so Tom nicely does it for me often), I mixed together the 6-spice blend, the juice of one lime and of one orange, salt, and 2 T. olive oil in a bowl with the chicken, and let it marinate for about 45 minutes. After chilling out in the fridge, I plopped it into a skillet and sauteed the (extremely fragrant!) chicken until browned, and then added in about 2/3 of a bag of frozen onions and peppers. Pretty, pretty:

I served up the chicken and peppers on whole wheat tortillas with guacamole, light sour cream, and Tom put salsa on his too.

I busted out the blender a few days ago to make some smoothies. Into the blender went: 1 banana, strawberries (including the MONSTER berry in the second pic below), a few ounces of plain Greek yogurt (which I was intrigued to try after seeing lots of other foodies blog about it), a couple splashes of milk, a handful of ice cubes, and a little Splenda too since these early-Spring berries weren’t the sweetest and the yogurt was unsweetened.

 

For another healthy late night snack this week, I also had a couple sweet potatoes hanging out in the pantry, and after seeing lots of other people blog about their sweet ‘tatoes, I peeled and sliced up a big monster sweet potato, and tossed with olive oil, salt, pepper, brown sugar, and a tiny bit of cinnamon (I didn’t want them too sweet… they’re sweet enough on their own, and I like the whole sweet/salty thing going on), and roasted them for about 3o minutes.

And I had this baby below for lunch today. Tuna (one of my addictions) and onion (I make my tuna with onion at about a 1:1 ratio. Yum!), a little miracle whip in a pita with lettuce and tomato. Mmm.

I have been craving falafel for about two weeks now. SO… the best eat of the weekend was my unpictured Falafel pita from Palm Palace. Love that place!!

Friday night I also had deliciousssss Tilapia with Pure Lump Crab Meat (a double inspiration for two meals I’m planning on making this week. Tune in! Hahaha) from Outback.
