Spinach & Bacon Hash Brown Quiche

Double post day! Ok, so in my last post I said that the best eats of the weekend were falafel…. nope! J/k! Tonight for dinner I made “Spinach & Bacon Hash Brown Quiche,” from the Mar/Apr ’10 issues of Taste of Home: Simple & Delicious magazine. I’ve made quiche several times before, but this was my first time trying this recipe. Plus, as you know from previous posts, I love breakfast-y foods for dinner!

First, I tossed frozen hashbrown potato cubes (thawed) with melted butter and pressed them on the bottom and sides of a pie plate and baked for about 25 minutes.

While the hashbrown crust was baking, I cooked a few slices of diced bacon in a skillet with onion, and then drained it. In another bowl I mixed together 3 eggs, half-and-half, salt and pepper, spinach, and shredded mozzerella and Swiss cheeses, and then I added in the cooked bacon and onion. Then I poured the entire mixture into the baked crust, after removing it from the oven, and then popped it back in the oven for about 40 minutes or so.

So good!! Since the onions were sauteed with the bacon, you could smoky bacon-y flavor in every bite, and the Swiss cheese gave it a delicious melty tanginess.
