Baby greens with chicken, chickpeas, and feta

A big, colorful salad was on the menu for dinner tonight. This dish is based off of this recipe from Cooking Light. First I whisked up a balsamic vinaigrette dressing with balsamic vinegar, EVOO, lemon zest and juice, sugar, Dijon mustard, and lower-sodium chicken broth.  Next I sauteed boneless skinless chicken breast in a skillet … Continue reading »

Memorial Day Weekend Extravaganza

Saturday (through Sunday afternoon) was the JH/MH Bday-SATC2-Bang EXTRAVAGANZA. Saturday we saw Sex and the City 2 at the theater, followed by dinner at Mongolian BBQ. Below is my plate #2, consisting of various veggies (broccoli, sprouts, onions, ‘shrooms [non-magical ], green pepper..), tofu and sweet and spicy orange sauce. Chicken Jerusalem at Mediterrano

Friday I took off work to extend my holiday weekend, but Tom had to work. For dinner, we tried another new restaurant, Mediterrano, which is only a couple minute drive from our house. The meal started out with some crusty bread, which did not taste homemade, but was warm and fresh regardless. On it, we … Continue reading »

Pictured below, in front, is an assembled burrito, ready to be rolled. In the back, behold my masterful burrito-rolling skills … Continue reading »

Pineapple Teriyaki Chicken Kabobs

Let me walk you through my weekend, backwards. Since we got our grill, one of the things I have been most eager to try making were kabobs. Tom put these bad boys together, using this recipe from dole.com that I found. On the water-soaked bamboo skewers are red and green pepper, zucchini, and chicken, which … Continue reading »

Carlyle Steak Salad

Friday night we decided to try Carlyle Grill, since it is right next to the movie theater and we were planning to go see Iron Man 2 later. I started with a bowl of the soup of the day, Rock Shrimp & Corn Chowder. And let me tell you, it was fantastic! Smoky, spicy, savory, … Continue reading »

Colorful Meals

I haven’t really made anything new and interesting this week, but I do have a few colorful pics from the last few days. Here’s a tasty lunch from this week – slice of toasted whole wheat bread with tuna and romaine, half a serving of cheesy pretzels (yes, I counted out ten of them – … Continue reading »
