Gnocchi with White Beans, Tomatoes, and Spinach

Tonight’s dinner involved one of my favorite things – gnocchi!

I have a series of meals planned this week from the most recent issue of Taste of Home Healthy Cooking magazine – lots of good ones this month! Tonight’s was quick and easy: Gnocchi with White Beans.

The dish is a mixture of packaged gnocchi sautéed in garlic and onion, a can of cannellini beans and of seasoned diced tomatoes, and sprinkled with mozzarella and parmesan cheese. Easy, delish, nutrish!

My rating: 7/10. Perfect recipe for a weeknight dinner.

Am I the only one who hasn’t changed their Facebook profile pic to a cartoon character? I’m all for issue-awareness, but I just can’t seem to jump on this bandwagon. Eh, maybe it’s just me. I DID, however, jump on the ‘change-to-the-new-Facebook-profile’ bandwagon, and I’m digging it. (PS – are you a MegGoesNomNom Facebook fan yet!?) Smile

Today was a rather easy-going Monday, which made me happy. Some Mondays just drain me emotionally, so it was nice to come home from work in a good mood today (mostly because I was looking forward to gnocchi tonight!). Another good thing: One of my pictures was accepted at Foodgawker today, which is always exciting. Naturally, the picture accepted was taken during the day (with actual DAYLIGHT.. I know, it’s rare these days) this past weekend, which seems to be the only times I can work on my photography.

Tonight after dinner I was seriously craving something CRUNCHY. All day I seemed to eat soft foods – leftover Minestrone Soup for lunch and yogurt, then gnocchi and breadsticks for dinner. So I am currently NOMMING a big bowl of carrot sticks! CRUNCH!
