Here’s a really easy, low-cal dinner that came together in no time flat on a week night: Skillet Tacos (recipe from Taste of Home).
Basically I browned half of a pound of lean ground beef (I added 0.5-1 tsp of Fajita Seasoning), then added onion, green pepper, tomato sauce, macaroni, water, and salsa to a skillet, and let it simmer for about 12 minutes, until the pasta was done, then added these toppings!:
Plus some chippies, for crunch! So simple, and tasty too:
The original recipe serves 2 and has 297 calories per serving. I doubled the recipe, and ate half, for a roughly 600 calorie dinner. Yum!
