Tonight’s dinner consisted of one of our “standards,” originally adapted from a recipe for Chicken Fajita Quesadillas found at kraftfoods.com. Into a hot oiled pan I threw in chopped onion and red pepper slices and sauteed for a couple minutes. Then I added a can of black beans and some frozen corn until heated through. Next I added a jar of medium chunky salsa (very healthy so far, yes?). That’s the filling.
In a clean frying pan (or two – sprayed with cooking spray), I placed two whole wheat tortillas, and added a big scoop of the veggie/bean filling. Tom’s half got some slices of baked chicken breast added, and I opted to go meatless but added plenty of jalapenos 🙂 Then I topped everything with shredded sharp cheddar cheese and let ’em brown up nicely on each side until the cheese started being melty and oozy. And then we dip them in light sour cream. 🙂

Melty Cheese!! And lots of leftovers, yay!
