Stir-Fry with steak, asparagus, and tri-colored peppers

After this weekend’s indulgences, I opted for some healthier meals today. Tonight I made a stir fry for dinner, using a recipe I found at (yes, it’s called libido-boosting stir-fry; no that is not why I made it – I honestly just thought it sounded good!).

While my brown rice was cooking on the back burner, I first sauteed a few strips of steak on high heat for maybe two minutes, which had earlier marinated in garlic and lime juice in the fridge for 15 minutes. I removed the beef from the pan, and added a little more EVOO with asparagus and cooked it for a couple minutes. Next I the beef back in the pan, along with three sliced peppers (red, green, yellow), a sliced onion, soy sauce, sesame oil, fresh lime juice, and fresh ginger root (got to use my brand spanking new microplane grater! forget to take a pic of it, I’ll get it next time). I served the stir fry over brown rice and topped it with chopped peanuts and fresh parsley (the recipe calls for cashews and cilantro… didn’t have any cashews on hand, and am not big on cilantro!).

I wasn’t a huge fan of this recipe (I mean, it was good, but not greeeeeat), but I felt really good about eating it, because it is so healthy. The recipe has four servings, and I probably had a bit more than 1 serving. Check out these numbers:

  1. I was looking for beef recipes when I found your post quite high up in my search. It wasn’t really what I was looking for but it was an interesting read. Enough to make me come back and have another look sometime to see what else you’ve discussed
