I haven’t really made anything new and interesting this week, but I do have a few colorful pics from the last few days. Here’s a tasty lunch from this week – slice of toasted whole wheat bread with tuna and romaine, half a serving of cheesy pretzels (yes, I counted out ten of them – OCD…), fruit bowl, and Stonyfield chocolate yogurt.
A frequent dinner in our house, Cajun Chicken Nuggets, roasted sweet potato, and steamed broccoli with my homemade cheese sauce.
Chipotle veggie burrito
I couldn’t decide if it was gross to post this half-eaten burrito picture or not, so I made a judgment call and decided it was not. Wednesday’s dinner – Chipotle vegetarian burrito with black beans, rice, grilled veggies, tomato salsa, and guac:
Thursday’s dinner – WF Salad Bar
Lots of random goodies; baby greens, arugula, spinach, sesame tofu, broccoli, peppers, red onion, edamame, chickpeas, green onion, mushroom, dried cranberries, grilled pineapple, sweet potato, artichokes, and feta with oil-free Tomato Olive dressing. I couldn’t even eat it all! Leftovers are currently chilling out in the fridge. This huge salad cashed out for $7.51. Not too shabby.
Corn Poblano Soup
I also got a small bowl of Corn Poblano soup at WF. Sooo good!! Savory, spicy. I loved this.
