Last night I made this recipe for Ham & Cheese Chicken from health.com. The recipe is pretty similar to Chicken Cordon Bleu, and was fairly easy to make. I cut some boneless skinless chicken breasts down the middle lengthwise to butterfly them (you’re actually supposed to flatten the chicken to 1/4″ thickness, but that seemed like too much work, so I did not). Inside I placed a couple slices of thinly cut deli ham, and a light spread of cream cheese, and then closed them back up. I next combined together a mixture of breadcrumbs, Italian seasoning, and parmesan cheese. After dipping each chicken breast in milk, I then dredged them in the crumb mixture. Lastly, I mixed together a little melted margarine and fresh lemon juice and drizzled it atop the chicken before sprinkling on a little paprika. I baked these guys for about 40 minutes (the recipe says less, but since these were HUGE and I didn’t flatten them, I figured they needed a few extra minutes. On the side, I decided to make it easy on myself and bake up a few tater tots and some Steamfresh frozen veggies. Tasty!
