Mediterranean Tuna Salad

Back to the present! I am officially caught up with blogging. Here is a recipe I made tonight, called Mediterranean Tuna Salad, from the August/Sept 2010 issue of ToH Healthy Cooking. There are so many recipes in this issue I want to try! The feature ingredient of the issue is the sweet potato (yum!), and the feature set of contest recipes in this issue are meatless recipes – both perfect for me! This recipe isn’t quite meatless, but meat is not the main star. I’d say this is a good way to describe the way I have been trying to eat recently – not necessarily completely vegetarian or meatless, but focusing less on meat as the main ingredient, and instead focusing on veggies and beans as the main stars of the dish.

To begin, in a bowl I combined:

  • chopped celery (I actually peeled the outside, with a veggie peeler, to get those stringy bits off – I used to hate celery, but found that if I remove that tough stringiness, I do like it!)
  • chopped red bell pepper
  • chopped green onions
  • chickpeas (1 can, drained and rinsed)

I also drained two 5 oz cans of chunk white albacore tuna (‘splurged’ on the tuna, since this was a dinner recipe). I may now be an albacore convert.

Meanwhile, I chopped up a huge bowl of romaine lettuce, and also prepared the dressing, which consisted of the following ingredients whisked together:

  • 2 T. EVOO
  • 2 T. balsamic vinegar
  • 2 T. dijon mustard
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • several grinds of fresh black pepper

I mixed the dressing with the bean mixture, and then topped the romaine lettuce with the dressed veggie and bean mixture. Then, I topped the salad with feta.

Served it up in my new bowls – perfect for salad! Wow! This was super tasty! And completely guilt-free. There’s not a single ingredient in there that’s not good for you (except maybe salt – and there’s not much of it!). I’m not ashamed to admit that Tom and I devoured this entire HUGE serving bowl of salad! Have I ever mentioned how much I love chickpeas? Well, if not, let me just say, I LOVE CHICKPEAS. Wow, I really want to make this again. Next time I will serve it with some warm bread. YumNomNoms.
