Tonight’s planned main dish was half-fail, half-success. Let’s begin with the success, shall we?
I have a habit of bookmarking recipes that I think I might like to try making someday. Tonight, I decided to try one of them: Mama Pea’s recipe for Bean Burritos with Mild Sauce, a healthified, vegan version of Taco Bell. Well, I added real cheese to mine, so they ended up being vegetarian. Works for me.
First on the agenda: Prepare the mild sauce. I made a couple of substitutions to the original recipe, based on what I had on hand.
Into the pot went:
- No Salt Added Tomato Sauce
- Chili Powder
- Onion Powder
- Garlic Powder
- White Wine Vinegar
I let the sauce simmer for 20 minutes. It sure smelled good, and thickened up nicely! Was tasty indeed. SUCCESS.
…Which means it’s now time to discuss the FAIL. The second main element to the bean burritos? The beans, of course. I blended two cans of reduced-sodium pinto beans in my blender until smooth. Per Mama Pea‘s instructions, I did not drain the first can of beans. However, I thought the beans seemed too liquidy, so I did actually drain the second can. After blending, I heated the beans in a skillet in which I had previously sautéed garlic in EVOO for a couple of minutes. And that’s it. And it was just bleh! It wasn’t bad, but it was just NOT good. The beans were super-liquidy, which likely could have been remedied by heating and letting some of the water evaporate, but I really had no desire. I tried seasoning with lots (and lots) of additional salt, cumin, adobo seasoning, pepper, to no avail. Hell, I even added a splash of liquid smoke. I couldn’t bring myself to eat these. 😦 Maybe I had low-quality beans or just no finesse at making these, but it just was not a success.
Luckily, I had prepared these beans yesterday, in preparation for today’s dinner. Knowing that the beans I had cooked were not good noms, I picked up a can of refried beans from Kroger during my lunch hour today. So sue me.
After the bean mishap, I didn’t really know what direction to go in tonight. I just randomly threw some stuff together when I got home from work and called it a meal! Pretty sure I exceeded my calorie goal though. Oh well.
-Threw some extra sharp cheddar in some whole wheat tortillas and made quesadillas. Of course, the jalapeno-laden one was mine. 🙂
-Heated in a sprayed non-stick skillet until golden.
-Made a bean burrito using canned refried beans, cheddar, and mild sauce.
-My quesadillas were pretty mediocre – merely a vehicle for shoveling light sour cream in my mouth. Kind of an odd meal. Whatevs!
So, I officially despise the fact that the sun had basically set by the time I got home from work tonight. It was so warm today, around 60 F, and I wanted to go for a walk, but not in the dark! Whatta fail! Though, I must admit I do like the fact that it is brighter in the morning when I am getting ready for work. I felt good this morning when I woke up (which is unusual – so not a morning person!). Like not just decent… good! I’m sure catching up on my sleep this past weekend sure helped though. I was utterly dragging my the end of last week. I feel like I am very strongly affected by the weather and seasonal light changes, whereas others (like the husband, for one), don’t even seem to notice! Maybe I’m just a whiner. Anyway’s that’s my blurb of the day.
