Greetings! Made it through another Monday…
Yesterday I went poach-crazy and poached a big package of boneless skinless chicken breasts, shredded it, and stored in it the fridge for later use this week.
White Orange Chicken Chili:
Today, I combined some of that shredded chicken with the following ingredients:
- 1- 15.5 oz can Great Northern Beans, drained and rinsed
- 1.5 cups reduced-sodium chicken broth
- 4 oz green chilis
- Half jar of chunky salsa
- 6 oz. shredded Monterey Jack cheese
Basically I heated this all up in a big pot and BAM – dinner! I can’t take credit for this tasty recipe. I recently enjoyed it at our company potluck, and got the recipe from a fellow potlucker (and scaled it down a bit for two – and we definitely scarfed down the whole pot).
Easy side – defrosted cornbread + honey. 🙂
Tomorrow I am planning to simply bake some chicken, but I have a couple new veggie sides I will be trying and blogging, so see I’ll see you then! It’s a date.
