Farewell ol’ Jenny: Baked Rigatoni

This is the third dinner recipe in a row that I’ve prepared from the most recent issue of Healthy Cooking magazine, and it is for Baked Mostaccioli. Also from this issue, earlier this week I also made:

I have to say that tonight’s recipe was the best!

To begin, I first cooked my pasta. I couldn’t find any pasta labeled “mostaccioli” at the grocery store (I think it’s like penne?), but I did see this big ol’ rigatoni pasta that looked even more enticing. While the pasta was cooking, I prepared a simple meat sauce consisting of:

  • browned lean ground turkey
  • canned diced tomatoes and tomato paste (+ water)
  • oregano, salt, pepper

Next it was time to get layering!:

Layers:

  1. Meat sauce and pasta (1/2)
  2. Mozzarella cheese
  3. Low fat cottage cheese seasoned with dried marjoram (or substitute basil or oregano)
  4. Meat sauce and pasta – the other half!
  5. Mozzarella cheese
  6. Grated parmesan cheese

Pop ‘er in a 350 F oven for 25 minutes (the recipe says 30-40, but that seemed too long for me).

Wow, when this came out of the oven, it smelled BEYOND amazing. The hub yelled down from the loft, “it smells like heaven down there!” I couldn’t agree more. Once I dug in, it was pure comfort. Delicious. The baked, golden melted cheese on top was the best part! According to the recipe, one serving (which is 1/6 of the below pan) is a mere 278 calories. WIN! The hub declared, “you should make this every night.” This is a man-pleaser, ladies.

We also had a salad course tonight. Gotta get those green veggies.

I have been beyond tired the last few days. I don’t know what my deal is. I think my body is retaliating against the cold weather (yeah, I have weird theories). I was feeling so horrendous after work yesterday, that comfort food was immediately required, followed by an 11 hour coma (yes ELEVEN hours). Phew.

Last night’s dinner treats: Burger from Bagger Dave’s, Turkey Black Bean Chili with the works (sour cream, onion, jalapeños, cheddar), and (half of) a brownie sundae.

Also related to food, do you know what I am looking forward to!? The season two premiere of Aarti Party on the Food Net this Sunday! Got it all set up to record in case I’m still asleep / binging on waffles when it premieres at 1pm.

AND…even more exciting news! Tomorrow our new stove is being delivered! Can’t wait! Tonight’s meal was the last to be prepared on the ol’ 30-year-old Jenn-Air that was included with our house. Farewell ol’ Jenny!
