One picture. A simple salmon dinner for two tonight.
I made a glaze for my salmon using:
- Apricot Preserves
- Soy Sauce
- Freshly-grated Ginger Root
- Red Pepper Flakes
- Salt and Pepper
After applying the glaze, I baked the salmon at 450 F for about 10 minutes. I always overcook salmon, but it was cooked just right tonight!
On the side we had leftover Smoky and Sharp Homemade Mac-n-Cheese. I also made a salad of romaine, baby spinach, a super juicy-sweet sliced pear, a half-salvaged overripe avocado, red onion, and gorgonzola cheese with a homemade red wine vinaigrette dressing.
Simple and delicious! Dessert was a big Mango-Raspberry-Banana Green Smoothie and an orange!
