Happy Hump Day. I’m sorry to say I have very little to offer today in terms of food. All I can say is that I ate lots of fruits and veggies today.
My lunch consisted of multiple fruit pieces and Ghiradelli chocolate (thanks Mom!).
For dinner we had planned to make Buffalo Chicken Strips, but the chicken that I defrosted seemed kinda funky and I couldn’t bring myself to cook or eat it, so instead I cooked up a bag of meatless Gardein Buffalo “Chik’n” Strips as our protein for dinner. These were good (phew that sauce was HOT!), but I liked the Crispy Chik’n Tenders better. I need to get me another pack of those guys.
To go with the buffalo strips, I made a huge pan of roasted veggies. I tossed red potatoes, zucchini, and red bell pepper in EVOO, sea salt, pepper, minced garlic, fresh rosemary and dried thyme, and also tossed baby carrots in EVOO, sea salt, black & red spice, and maple syrup, and roasted at 400 F for thirty minutes. Roasted veggies are the best.
For lack of anything better to serve with the meal, I threw together a salad with romaine, baby spinach, carrot, red onion, gorgonzola, and lite raspberry vinaigrette dressing.
Then I got camera-crazy and took around 40 pictures of my roses.

Today, for the second day in a row, I did the Jillian Michaels’ 30 Day Shred Workout (level 1). I love this workout! Last night I did it and felt great afterward, and today I was mildly sore – which is good because it means it was effective, but not so hardcore that I wasn’t able to repeat it today. Tonight I did the workout again and phew, that suckah was INTENSE. So sore now. I might order the DVD since it is only available on-demand for a few more days. I might need to get some hand weights to replace the water bottles I’ve been using though!
Has anyone done the full 30 days, and/or have experience with Level 2 or Level 3?
