Remember this amazing sandwich at I had a Seva this past weekend?:
Well I just HAD to recreate it! The Seva menu described their Pesto Pizza Sandwich as ““Smoked mozzarella, parmesan, tomatoes, fresh basil-cashew pesto and balsamic herb vinaigrette grilled on Avalon seeded rye.”
First I made a Basil Cashew Pesto using this recipe as a guide. Love the mini food processor that came with my immersion blender. It was perfect for a small batch of pesto.
I buttered seeded rye bread and pesto-ed the other side, and applied a few slices of smoked mozzarella cheese for the first layers.
Next I added tomato slices, and brushed with a mixture of balsamic vinegar, olive oil, salt, and pepper.
I topped it with buttered and pesto-ed bread, and applied another skillet on top for a faux-panini press on my stovetop.
Here’s how mine turned out!:
Super delicious!!! My bread wasn’t quite as good as the Avalon Rye Bread that Seva used, but all the flavors were there!
A big bowl of fruit was the perfect side dish.
