Multi-Tasker Stuffed Poblanos

Today I feel like I keep starting things without finishing them. I’m the kind of person who really just can’t sit still and always has to be doing something or else I get stir crazy. But… if I do the same thing for too long I get bored and want to move on to something else.

It’s not uncommon to find me watching TV (I watch very little TV but usually it’s just on and I’m doing something else), listening to music, writing a blog, chatting, painting my nails, and surfing the web all at once (but I think lots of people do that). Or else spending a couple minutes folding clothes, then chopping an onion, then folding a few more clothes, then washing a pan, etc. I’m very productive but work in shifts, and like to move from task to task.

This makes me an excellent multi-tasker but sometimes I have trouble focusing on one thing without getting bored. I did this at work today all day (I won’t bore you with the mundane details) and then tonight. For instance, I started watching Eat, Pray, Love (mostly because I want to see if it really is as bad as people say it is), got about 36 minutes in, and then started uploading pictures for the blog (if you’re reading this post then that means I finally finished the post and hit publish!). Then I started making an itinerary for my upcoming vacation next month. And I have more examples too but I don’t really feel like finishing this paragraph. Case in point.

I don’t want to come across as a flake – because I am very set on finishing things I start – eventually.

One thing I did start and finish tonight was Week 1: Day 3 of the Couch to 5K plan. The huz and I began the program mid-last week, and decided to repeat Week 1 again this week since we (huz and I) only ran twice last week (the goal is to run three times per week). Five minutes of brisk walking, followed by twenty minutes of alternating intervals of 60 seconds of running and 90 seconds of walking. Went well tonight – felt a lot easier than the last two time (i.e., my lungs didn’t feel like they were broken afterward), but I have a tiny pain in my foot that is bothersome.

My run/walk was preceded by a large random salad (romaine, spinach, green pepper, pear, cheddar, gorgonzola, carrot with raspberry vinaigrette), and these puppies:

Slice poblanos in half, remove seeds and veins (Hint: wear gloves or THIS will happen to you. And it ain’t pretty, hun), and microwave for 3-4 minutes on high. (Multi-taskers can go do something random at this point and come back in a few.)

Then add in the simplest but most delicious filling ever:

  • 1 can refried beans
  • 1 pouch microwaveable brown rice
  • 1/2 cup salsa

Microwave for a couple minutes, sprinkle with cheese, microwave for another minutes or so, and BAM! Dinner is served.


I thought these guys needed a little jazzing up so I added light sour cream and more salsa on top.


Loved the filling; didn’t love the poblanos I’d rate the dish overall as a 6 but the filling as a 9. I could eat bowlfuls of that delicious filling. For my last poblano, I scooped out the filling at ate it with lime tortilla chips instead! Yum!

FYI: Serving size = 2 halves = 303 calories. (I had a big salad, and three halves with dinner, and later ate the filling of a fourth with chips.)
