Mmm, this Honey-Chipotle BBQ Chicken (recipe from Cooking Light) was delish. Sweet, tangy, spicy, with a fair amount of heat! I topped it with shredded mozzarella and raw red onion slices, and opted to go bun-less, and instead served tater tots, in places of buns. Tater tots seem to be a tastier source of carb calories than a bun, no?
I also served the Honey-Chipotle BBQ Chicken and tater tots with Corn, Black Bean, & Avocado salad, dressed in lime juice, cilantro, and salt. Super delish dinner! Tonight I tried photographing my dinner plate in a north-facing window, which is different than my usual location. I like the results! I’m also a big fan of these new square white plates I purchased on clearance ($3 each!) a Meijer this weekend.
