Well, if I implied in any way that our Week 4 CSA box was lacking in any way (and even if it was, the weather would be to blame!), then Week 5 certainly made up for it! Lots of fun stuff in this week’s box!:
Tonight I ate a late, solo dinner, in which I used three different veggies from my CSA box, plus a few extras lying around my fridge. I sautéed:
- From CSA Box: scallions and shredded spring turnips
- red and green bell pepper
- red onion
And I basically made a huge ‘scramble’ using the above sauteed veggies scrambled into two eggs + two egg whites + dashes of Frank’s. Sriracha has been my hot sauce of choice lately, however, Frank’s goes best with eggs, IMO.
I’m not sure why, but when I’m cooking dinner for myself only, eggs always seem to be one of my go-to choices! Such a cheap, easy, healthy protein.
I basically destroyed the integrity of this plate of food utilizing my CSA veggies by slathering Kraft singles on top, but it doesn’t matter! My egg scramble was delicious. For the Irish Cobbler potatoes (from my CSA box), I washed + tossed in EVOO, seasoned with salt, pepper, minced garlic, and dried thyme, and roasted at 425 F for 25 minutes. They were absolutely.delicious! I also served two meatless sausage patties on the side.
I hope this post makes sense because I threw it together rather quickly! I spent a lot of my day dashing around, and when I finally got home this evening, I didn’t feel like carting all my veggies outta the fridge to photograph together, so I took these quick snapshots IN the fridge, for the most part. It works!

Also this week I made a gnocchi dish using these ingredients and this recipe from Eating Well:
The dish turned out okay, but I totally forgot to drizzle the balsamic glaze on top! I think it would have been much better with the acidic glaze. I was quite bummed after dinner when I realized I had forgotten. FAIL! Oh well. Just an average recipe.
Is it bad that it is 12:15 AM and I am already thinking about tomorrow morning’s iced coffee!? It’s an ADDICTION, baby.
Doesn’t EVERYONE think of iced coffee at 12:15 am? 😉
