I have lots of produce to use! Lots of good stuff in Week 7 of my CSA box this week:
- green beans
- yellow squash
- cucumber
- lettuce + unpictured Chinese cabbage
- scallions
- radishes
- heirloom Irish Cobbler potatoes
In addition to my CSA veggies, for which I have plans later this week, I was also given several green peppers, cucumbers, and zucchini from my parents’ garden. Tonight I used the green peppers in a Stuffed Green Peppers recipe from Taste of Home.
First I sliced off the green peppers tops, removed the seeds, and then blanched the peppers in boiling water for four minutes.
Meanwhile, I browned half of a pound of lean ground beef with half of a chopped onion. Next I added tomato sauce (8oz), and 1/4 tsp each of dried basil, thyme, and oregano, and let the filling simmer for five minutes.
Instead of cooking my own brown rice, I used a bag of Steamfresh microwaveable rice and mixed it into the filling.
Next I filled the peppers, and baked for 15 minutes at 375 F degrees.
The peppers were delicious, and even better after adding a scoop of salsa on top! On the side I utilized my cucumbers in a Cucumber Salad (click here for the recipe), consisting of sliced cukes tossed in a dressing of white wine vinegar, sugar, water, salt, and sliced scallions (from my CSA)! You can also add lime juice if you have it. Loved this dinner!
