Lack of Motivation

I feel so unmotivated today. Actually, for the last couple of days I’ve been feeling unmotivated. I don’t know what my deal is. I’ve just been feeling kind of blah. I had a headache literally ALL day today (hooray for twelve hour headaches) and was too lazy to even take some ibuprofen until an hour ago. Muuuch better. Actually, that was preceded by (half-)jokingly asking the huz if I should drink two beers or take two ibuprofen tablets to feel better.

He voted for the ibuprofen. No fun.

…I had no motivation to run today. I barely had the motivation to cook dinner. I’m the kind of person who guilt-trips myself if I’m not being productive, and so on top of feeling unmotivated, I also feel guilty. Yesss. Okay, enough of that shiz, right? No one likes hearing about my White Girl Problems.

Biercamp Hawaiian Brats

I’ll tell you something that is NOT blah. Biercamp! We made our second trip to Biercamp this past Saturday and picked up a pack of Hawaiian Brats and a container of Jerky Pâté. You may remember our recent first trip to Biercamp, when we purchased a bounty of meat and prepared a veritable feast.

This time, the huz grilled the Hawaiian Brats on the grill. Mmmmm. Swoon.

These Hawaiian Brats were pretty killer. Not quite as good as the Asparagus, Sweet Onion, & Cheddar Brats we tried last time (which were amazing!), but pretty close.

The Jerky Pâté is a thick, super-smoky, cream cheese-based dip with savory beef jerky mixed it. It is addicting.

I wanted something light, crisp, and summery on the side so I made Cucumber Salad in a sweet vinegary dressing on the side (recipe here).

I love this dinner. I declared that from now on, every Saturday is Biercamp Brat Day. Smile

Chocolate Caramel Cookies

I also made cookies yesterday, but I was too lazy to take a picture of the finished product. Instead, I have just this one picture of one raw cookie. Sorry, that’s kind of lame, I know. This is the best cookie recipe for the unmotivated person.

What if I told you these were made of boxed cake mix (with less liquid added than usual, to create a thicker dough) wrapped around around a Rolo?

What if I told you these were great?

Well, my friend, both statements are true. Try it out, it’s quite delicious. When I told my co-worker the secret behind these cookies, she referred to them as “gangster cookies.” Pretty much.

Roasted Veggie Tacos

If you haven’t tried these yet, you SHOULD! I made these veggie tacos a couple weeks ago and have been thinking about them ever since. On Sunday I decided to tackle them again. You can read about how they are made in my last post, but they basically involve several layers of flavor and texture:

  • Roasted bell peppers, onion, and sweet corn, seasoned with cumin
  • Crunchy, roasted black beans, seasoned generously with Smoked Spanish Paprika
  • Crispy Slaw consisting of cabbage, avocado, and radish seasoned with vinegar, sugar, salt, and lime juice
  • Chipotle Sour Cream, made by simply mixing minced chipotles in adobo sauce and sour cream

Buffalo Turkey Burgers

Tonight I made Buffalo Turkey Burgers using this recipe. Very easy – simply mix cumin, chili powder, garlic, hot sauce, salt, and pepper with one pound of lean ground turkey, form patties, and cook over medium-high heat in a skillet. Simple and tasty! I topped the burgers with more hot sauce, celery, blue cheese, and lettuce, and served on a bun.

The picture isn’t great, but I was hungry and unmotivated tonight! My camera viewfinder has not been working for the past few weeks, so it’s really difficult to capture quality food shots lately. I also realized, when I went outside to photograph, that I left my sliding glass door wide opn with no screen while cooking this meal, so I was somewhat flustered! Lots of bugs flew inside, I fear!

Asparagus with Balsamic Tomatoes

For my side dish, I made Asparagus with Balsamic Tomatoes, using this recipe from Cooking Light, but I wasn’t totally thrilled by it. I did make a few substitutions (like mozzarella in place of goat cheese, and balsamic glaze in place of balsamic vinegar). The grape tomatoes were really quite delicious, but the dish as a whole was just okay.

Social Media Spoilers

Does anyone else watch So You Can Think You Can Dance out there? What about Food Network Star? Well, if you watch either, or both, you may be aware that the season finale of both of these shows happened in the last week. And guess what? I managed to find out the winner of both shows BEFORE I was able to watch the finale on my DVR. How does this happen to me, ALWAYS!? I swear! Again, more White Girl Problems. Clearly I live a rough life.
