Pinto Bean Burritos with Cream Cheese

On nights when I am cooking for one (one = ME!), more often than not, I tend to make meatless meals. Recently I tried this new Bean Burrito recipe while the huz was out of town for work. Actually, he ended up being in Baltimore during the 5.9-magnitude earthquake last week! Scary! Luckily, he and everyone in his building were fine.

First, I started with some veggie goodness, using chopped green peppers and chopped Roma tomatoes from my CSA box.


Next I added a can of pinto beans that I drained, rinsed, and coarsely mashed.


…And cream cheese! This is what took these babies over the top. What a great idea!


Add some spiceage:


And roll those suckahs up in some tortillas.


I wanted to capture a picture of the filling, but I started inhaling these burritos and hastily captured only this one, sad picture on my iPhone. These were delicious, I really liked this recipe! The cream cheese was a unique and delicious addition!
