Blueberry Banana Pancakes

This weekend I had a ripe bunch o’ naners I needed to use, and an abundance of berries, so I made these Blueberry Banana Pancakes, inspired by this recipe from Taste of Home. My additions to the original recipe included cinnamon and nutmeg, and I substituted all-purpose flour for whole wheat flour.



Thick, fluffy ‘cakes!


Mmmm! Only a scant drizzle of syrup required – the ripe bananas sweetened these ‘cakes right up.


Pretty, pretty. Loved these pancakes!


Sunday afternoon, I tackled this stubborn guy, in preparation for a recipe I have planned later this week.


I have had way too many close encounters involving my chef’s knife, gravity, and my foot. Luckily, no harm has befallen my extremities thus far.





Twenty-four hours later, however, I still had orange hands from that suckah. Sheesh.

Sunday night dinner was rather divine. The day itself was not good, however, the food sure was. I sliced up these veggies, and tossed them in EVOO, salt, pepper, Old Bay, and garlic powder, in preparation for a trip to the grill:


..Served the grilled veggies with steak and homemade garlic mashed redskins! Yum!
