Banana Oatmeal Pistachio Cookies

Eek. After a weekend out of town, I came home to find these bad boys – super ripe ‘naners.


Naturally, I had to bake something with them. I found a recipe on, which was originally from the American Institute for Cancer Research, for these lower-calorie, relatively healthy Banana Oatmeal Cookies.

First, the dry ingredients: flour, baking soda, salt, cinnamon, allspice, oats, and chopped pistachios (used in placed of walnuts). I omitted raisins.


The wet ingredients (banana, egg white, margarine [used in place of butter], and vanilla extract) were mixed in my blender and then stirred into the dry ingredients to form the cookie dough.


I, like other reviewers of the recipe, found these cookies only needed about 9-10 minutes of baking time, and not the 15 minutes suggested by the recipe.


Fresh out of the oven, these were so chewy and delicious! I love the texture. After my first bite, I decided to lightly sprinkle the cookies with sea salt. I think it was a good call! Later in the day after they cooled, they were also good, just not quite as chewy-gooey.


The best part of this recipe was that I had everything on hand – or at least suitable substitutes. The second best part, is that these only have 67 calories each! I would rate these an 8/10.

  2. I love to bake and oatmeal cookies have always been my favorite cookie!!!! I am excited to try out some oatmeal mix cookies this fall:) LET THE BAKING BEGIN!!!!!!! First is oatmeal/apple chunk.

I made some apple oatmeal cookies the other daty and they came out about the same as your did it sounds. Still great with a glass of milk. Oatmeal just seems great this time of year!!!

  4. Thank you so much for this post, I’d just like to say that your cookies look AMAZING! It is sad that I am the only one in my family that likes sweets though. I bake goodies and then end up eating them myself or they sit forever ;( Your recipie seems too good to pass up though. I may just have to try it out and see what the critics think. Either way… if not I get a great trea all for myself!
