Cooking Light recipes rarely disappoint, and I had high hopes for this Turkey Sausage, Mushroom, and Potato Gratin recipe.
(Click that Cooking Light link at your own risk. Currently the home page is a FLAMING OVEN. It’s a little-known fact that, for the past few years, I’ve experienced frequent dreams related to flaming appliances, especially gas stoves and furnaces. Just a few nights ago I had a terrible nightmare about a flaming toaster oven that woke me up, ridden with anxiety and covered in sweat. Gah! TMI!?)
However, it just didn’t do much for me. It was just, “meh.” Just okay. Too much liquid left in the bottom of the baking dish. Slightly overcooked cheese, slightly undercooked potatoes, lack of flavor. Not my favorite Cooking Light recipe.
Kale chips were the highlight of my dinner tonight! Especially after I drizzled them in ketchup.
Dessert was pretty weird, but that is how I do. I made sugar-free instant chocolate pudding, added a dollop of Greek yogurt, a drizzle of honey, granola, raspberries, and a few chewy dried apples for texture. I don’t know what this was, but it was good.
Happy almost-Friday!!!

This song gave me goose bumps on my commute home tonight. Err…maybe that was the first snow of the season pelting my car. All the weird, demented strings-effects remind me of one of the pieces we’re rehearsing in orchestra, called Red Cape Tango.
