When I think of Tostadas, I think of something difficult to eat. However, the crunchy yellow corn tostadas I found for this recipe were the perfect size, and made for an easy-to-eat, and easy to cook, dinner.
This might look like a lot of ingredients, but most are optional toppings for the Black Bean and Beef Tostadas I made, using this recipe from Taste of Home.
Super easy! On tostada shells layer:
1. Warmed refried beans.
2. Pepper jack cheese.
3. Mixture of browned lean ground beef, canned tomatoes with green chilies, and black beans.
4. Sour cream, lettuce, cilantro, jalapeños, etc.
These were great and came together in no time. I love these tostado shells – they make for an easy-to-assemble meal out of whatever ingredients you might have on hand, anytime.

Book Review
This week I have been reading a new book called The Fault In Our Stars by John Green. I’ve really been enjoying it, even though I start crying almost every time I pick it up. Yet I keep coming back for more. It is raw and heart-wrenching, yet funny. The two cancer-ridden teenage main characters are likable, mature beyond their years, contemplating existentialist questions during their time together. Though I have about 60 pages left to read, so far I would definitely recommend this book. John Green is a talented writer.
