Curried Chicken Shepherd’s Pie. I actually made this over a week ago. I don’t know why I haven’t shared it with you sooner because it was quite tasty. The recipe is from Taste of Home.
Curry powder adds an exotic and playful twist to this classic comfort food dish.
Buttah + veggies galore (onion, celery, carrot, peas).
Flour (for thickening) and curry powder!
Liquid: milk and chicken broth.
Top with mashed potatoes and sprinkle with paprika. I used homemade redskins, unpeeled, and mashed with butter, milk, salt, and pepper. This would be a great use for leftover mashed potatoes as well.
After baking for half an hour, your one-dish dinner is ready. So pretty!
This tasted wonderful! The curry powder added a rich depth of flavor to the creamy, savory sauce. Don’t be scared away by the curry powder though – the sauce really is rather mild and I think this would appeal to many. I loved the abundance of veggies, and the mashed potatoes added a comforting element to this nutritious meal.
