Ground beef is not a commonly used ingredient in my kitchen but I have somehow cooked with it about three times over the last week. Last week I made a really excellent Beef & Cabbage Stew. A couple days later, I tried this recipe for, well, …this recipe that has a pretty cheese-tastic name, that I found in my Taste of Home Healthy Cooking magazine this month. That name would be “Husband’s Dinner Delight,” and this version was the “makeover” version, in that calories and fat are reduced compared to the original recipe.

It’s basically a bunch of tomato-y, beefy, noodly yumminess layered with a mixture of cream cheese and cottage cheese, topped with more beefy noodliness, and finished with a bit of extra sharp cheddar cheese. ‘Twas good stuff. Hearty and satisfying, yet guilt-free, man food. You can find the Husband’s Dinner Delight recipe here. Oh, and for the record, the husband did like it too.

We also grilled burgers this weekend, using the beef seasoning ingredients in this recipe. Basically, we mixed in finely chopped onion, ketchup, garlic, Worcestershire sauce, steak sauce, and cider vinegar to the patties before the huz grilled the burgers. To be honest, I don’t think the seasonings added a lot, but the burgers turned out great.


Speaking of beef, did I ever tell you the story of the “Beefy” shirt?

Well, if not, one day the huz and I were at Meijer, perusing the men’s clothing section. He needed some new white tees, and he had me check the tag on the back of the shirt he was wearing to see the size. It said “BEEFY.” For some reason, at the time this was the funniest thing either of us had ever heard, and we erupted in laughter for a solid five minutes at Meijer. We still joke about it to this day. I guess you had to be there. But, for those of you who were not aware, Hanes does in fact produce a style of big & tall (for my 6’4” husband) t-shirt called “beefy.” And in fact, these shirts are available in size Small through 4X. Who knew.

Tonight on Pinterest I came across a picture of a sloth and now I cannot stop Googling sloth images. They are so cute and goofy looking. That devious grin is so sly.
