Strawberry Rhubarb on the Fourth

Happy 4th to you, friends! The huz and I had the day off today. I used that extra time in my day to prep some pretty awesome noms.

Just add egg:


Lunch: Toasted Great Harvest bread with cheese, bacon, and a scrambled egg, with a bowl of watermelon, raspberries, banana, and cherries.


This afternoon I made that strawberry rhubarb craving happen. My grandma used to make the most incredible strawberry rhubarb pies and strawberry rhubarb jams and I miss them! Rhubarb reminds me of my grandma so much – she and my grandpa had a big patch of rhubarb plants growing in their backyard, next to the grape vines and the pond, and I was frequently warned to stay away from the plants as a child, since the leaves are poisonous, apparently?! Rather than making a pie, I went with a “crunch” recipe.

I chose a recipe from Taste of Home that had many positive reviews.

Makeover Strawberry Rhubarb Crunch

I sliced up two and a half cups of strawberries and chopped up two cups of rhubarb. When discussing my strawberry rhubarb plans with my mom, she warned me not to dice the rhubarb too small or it might disintegrate – good advice! The rhubarb held together perfectly but next time I might not slice the strawberries so thinly.P1080356

I brought the fruit, corn starch, and sugar to a boil for a couple of minutes, until thickened.P1080358

Next I poured the mixture into a greased 8×8 Pyrex baking dish. Actually I added one teaspoon of vanilla first. Then I poured it in.


On top went the “crunch,” which consisted of oats, flour, brown sugar, butter, and cinnamon. I baked this for 30 minutes at 350 F, and here is the final product!:


Of course you’ve got to try a small sample while it’s still warm!


Salivating yet? Oh my noms, this was amazing!! The filling was just how I remembered it in my grandma’s pie – that tart bite of rhubarb paired with the sweet strawberries! Mmm! And the filling thickened quite nicely – it was not watery at all. Also loved the oat topping!

Not gonna lie… between the two of us, the huz and I ate about 2/3 of the 8×8 baking dish today! So good! Luckily the nutrition facts aren’t too bad.

I swear, I need to open a café or something.

Such a great dinner. The huz requested that I made this one more often. I agree.

Plus we had more strawberry rhubarb crunch for dessert! An awesome day of eats on the fourth today, for us, what about you??
