I love starting out the week eating well, because I think it really helps set the tone for the week. Monday’s dinner was full of Super Foods and I felt great eating it.
Salmon Burgers with Green Goddess Sauce

To call these “burgers” is a bit of stretch, given the shape of the final product! The fish used is one pound of chopped salmon filet, with the skin removed. I have made salmon “croquettes” in the past, using canned pink salmon, but this recipe interested me because it consists primarily of pure, fresh salmon filet, as opposed to canned salmon, and also contains no filler ingredients, such as bread crumbs.
After carefully chopping the salmon, I mixed it with a few simple seasonings, including minced red onion, cilantro, salt, pepper, and fresh ginger, and then formed the mixture into patties. The patties were placed in the fridge for about 20 minutes, while I prepped the sweet potatoes and popped them in the oven for roasting.
Next, I removed the salmon burger patties from the fridge, placed them in an oil-coated heated skillet, and cooked for a few minutes on each side. The “burgers” really didn’t told together well in the skillet, but really I found that this in no way hindered my enjoyment of the dish, as I simply served the cooked salmon atop of bed of dressed baby greens, so it didn’t matter if the patty was in one piece or not. In fact, the salmon was really delicious! A squeeze of lemon really completes the dish.
The green goddess sauce recipe pairs very well with the salmon, and took the dish up another level. I did omit the anchovies, not because I have anything against them or am opposed to using them, but I honestly just wanted to save a few bucks. The sauce was really delicious even without the chopped anchovies, but if you have them on hand, I bet they would enhance the sauce.
Green Goddess Sauce:
This dinner is full of “super foods” (salmon! sweet potatoes! olive oil! greens!) and also delicious and easy. This was an interesting new way to enjoy salmon and I’d say the recipe is a keeper. As opposed to salmon burgers that contain lots of bready fillers, the huz particularly enjoyed the “meatiness” of the salmon “burgers.” (Me too!)

Despite starting out the week eating well and with a positive attitude, I slightly went off track on Tuesday night! I had planned to make a Shrimp Cobb Salad this week, but having forgot to buy bacon, I decided to delay this meal until next week (it uses frozen shrimp!) and instead take advantage of the Weather Perfection that was Tuesday, and eat $1 burgers on the patio at Bar Louie. I did limit my martini consumption to one this week, so I think I was pretty responsible, right!?
For me, a bun-less beef burger with pepper jack cheese and jalapenos.
And I split and order of calamari with Five-Star SexiMexy. It was half off during happy hour!
