Sorry bout that. Camera settings were not right, I was in a rush, blah blah. Excuses.
Tuesday’s dinner plan was Pimiento Cheese BLTs but I forgot to buy pimientos at the grocery store this past weekend. Fail! Instead, I improvised and just made traditional BLTs on toasted sourdough bread, with Hellman’s mayonnaise, romaine, ‘maters, and bacon, served with roasted Brussels Sprouts.
On Wednesday night, having only a brief period of time to throw dinner together before leaving for a little birthday soirée for a friend later in the evening, I made one of the fastest dinners ever. Aaaaand it was awesome!
1. Sweet potatoes, cooked for 10-15 minutes on high in the microwave, topped with modest quantities of butter, salt, pepper, and brown sugar.
2. Creamed Spinach <- I have this memory memorized! Perfect quick, easy, healthy side dish,
3. Sliced Turkey Smoked Sausage – I sliced it into bite-size pieces, heated in a skillet for a few minutes, and then at the last minute, poured a sweet, tangy sauce over the kielbasa, consisting of steak sauce, Worcestershire sauce, brown sugar, and cider vinegar (inspired by this recipe).
Then I proceeded to stuff my face with banana bread, cheesecake, wine, and pastries from Shatila’s. Yessss.

Looked back (ping back?) ha! love it..to your pimiento cheese recipe. We HATED pimientos when we were young. Don’t think we knew what they were. Weird texture. We would steal the gin soaked olives out of grandma or grandpa’s martini and pick out slimy, gross red thing. What could be better than freshly baked sour dough bread toasted slathered with pimiento cheese, bacon, did I say BACON (?), and tomatoes from your own garden! Can’t wait to try it!
