Tomato Bruschetta, Grilled Brats ‘n’ Corn

This week has been about me trying to nom all my summer faves before I stop denying that August is really over.

Case in point: three of my absolute favorite, ultimate summer foods on a plate. Er, on two plates.

    • Tomato Bruschetta – I just cannot get enough tomato-basil goodness. I rub the toasted baguette slices generously with a clove of garlic before topping them with the tomato mixture. The more garlicky, the better, baby.
    • Grilled Corn – This was probably the best corn I’ve had this year. We husk the corn, brush it with olive oil, and season with salt, pepper, and Old Bay before popping the cobs straight on the charcoal grill for about 10 minutes. Always fabulous!
    • Biercamp Brats on the grill. Always da bomb. This time we tried Dirty Swiss Bastard. They were great but did quite not live up to my beloved Jalapeño Pepper Jack and Gouda Portobello flavors.

I know I’ve said it many times before, but summer meals really ARE the best! It has to be a combination of all the wonderful fresh seasonal produce mixed with the magic of firing up the grill.
