Like I mentioned in my previous post, this week I have been trying to prepare many of my summer favorites before the autumn chill sets in!
Today I am here to talk to you about a recipe I first made a little over one year ago, for BBQ Chicken and Blue Cheese Pizza. In fact, I enjoyed this recipe so much, that I even included it in my Top Recipes of 2011 List. And that was the last time I made it!
Well I have been thinking about making this pizza again all summer, so finally I did. And that was a great decision.
BBQ Chicken and Blue Cheese Pizza

The prep work involves chopping a few veggies. I used sliced red onion, and chopped yellow bell pepper and roma tomatoes.
I used a prebaked store-bought thin pizza crust. Boboli brand was my choice and I really liked it. On top of the crust went Sweet Baby Ray’s BBQ sauce and shredded cooked chicken.
Then add your veggies, blue cheese crumbles, and pop this baby in a HAWT 500 F degree oven for about ten minutes. That’s it!
At the risk of sounding like a total cliché, this pizza is LEGIT.
So delicious.
All the flavors work so well together: fresh veggies, sweet and tangy BBQ sauce, rich and creamy blue cheese. Love it!
Watermelon is the perfect summery side dish for this pizza.
