How does this plate look?
Not too shabsters, methinks.
Saturday I made Beef Carnitas, using beef stew meat, seasonings, and Cooking Light’s recipe, which involved an hour and a half of low-and-slow simmering in my French oven.
After 90 minutes of simmering, I achieved tender, falling-apart chunks of beef. I did run a knife through the beef chunks, and it was akin to running a knife through butter – so tender. I served the Beef Carnitas atop warmed corn tortillas, and topped them with a salsa containing:
- diced tomatoes
- avocado
- diced raw onion
- cilantro
- lime juice
Heeeeck yeah. I had two tacos and then went back for two more. Good stuff, baby.
These tacos were enjoyed on Sweetest Day, while we watched the Wolverines kick some Spartan bootay. …Go Blue.
On Sunday, the huz and I spent some time at Gallup Park, enjoying the beautiful autumn colors along the Huron River.
We saw our old pal, Mama Goose!

And because Mondays are, well, Mondays, a Happy Hour at Mélange was in order this week.
I shared an order of those beloved Duck Nachos I raved about last time, as well as the delicious Beef Thai Rolls. I also had some sushi that I completely forgot to photograph! I recommend the Red Dragon Roll. Mélange has a pretty awesome Happy Hour deal, by the way, but it is only from 4:00 – 6:00 PM on weekdays. All wines by the glass, appetizers, and sushi rolls are half-off! So get there before 6:00 and order plenty!
