Last Week:
Dinner Meal Plan for February 23- March 1:
- Saturday: Krispy Krunchy Chicken
- Sunday: Blackened Salmon, Thai Butternut Soup, Creamed Spinach <-soup post coming soon!
- Monday: Rich Chicken Soup
- Tuesday: Kielbasa & Kidney Beans <- This recipe is SUCH a winner! I’ve made it at least 8 times. Use delicious and inexpensive turkey smoked sausage to make it even more low-calorie.
- Wednesday:
Dinner date with a friendWe had to postpone our plans due to the weather. Sad face. The huz and I grabbed a couple subs from nearby Dibella’s instead. Not a bad substitute!
- Thursday:
Couscous Meatball SoupThe huz and I both got home super late so we decided to go use a gift card, and combine it with a coupon for a free app, at Red Lobster instead. I had a lobster tail and lobster tacos combo. And biscuits. And salad. And half of a sweet chili shrimp appetizer. I could barely eat my entrée by the time it came out, hence I definitely ate a lobster tail as leftovers in my cubicle for lunch on Friday. No big deal.
- Friday: Couscous Meatball Soup

Last week, for various reasons, I spent a TON on groceries at Meijer. I also made a supplementary stop at Whole Foods mid-week, and used that opportunity to stock up on frozen seafood. This week I planned my menu around all the proteins I have on hand in my freezer, including chicken thighs and breast, shrimp, and salmon – so I basically just needed to pick up fresh produce and a few pantry staples.
I managed to buy all of the above groceries for a mere $23.61! WIN!
