What I’ve Been Nomming Lately // October 12, 2014 Edition

It’s been three weeks since my last “What I’ve Been Nomming Lately” post, which means the blog is sorely overdue for an update. I’ve obviously nommed tons of food since my last update, so without further ado, let’s get to it.

Sunday, September 21: Slow Baked Chicken Thighs with Tomato, Fennel, and Lemon

This new Cooking Light recipe turned out okay but I didn’t care for it enough to dedicate an entire post to it.

Monday, September 22: Spicy Pork Soup with Kale

Just as delicious the second time around! I especially love the zingy, peppery broth.

Tuesday, September 23: Blackened Salmon, Sweet Potatoes, and Apple and Pistachio Brussels Sprouts Salad

Wednesday, September 24: Saucy Mushroom Chicken

This recipe always satisfies. The spice blend used on the chicken is da bomb.

Thursday, September 25: Egg Salad Sandwiches & fruit. Easy peasy and the huz likes it.

Sunday, October 5: Crock Pot Creamy Chicken Tortilla Soup

I highly recommend halving the amount of chicken stock that is called for in this recipe, by reducing from 2 quarts (8 cups), to 1 quart (4 cups). This is the second time I’ve made this recipe.

Monday, October 6: Smoky Pork Stir Fry

A repeat-worthy recipe! Will keep it in the rotation for sure.

Tuesday, October 7: “Wing it” night – take out from Old Carolina BBQ. The huz’s favorite.

Thursday, October 9: Blackened Salmon, Luann’s Kale Salad, Sweet Potatoes

It’s safe to say we are obsessed with IGE’s kale salad recipe. I’ve made it at least 8 or 9 times!

Friday, October 10: Date night at Ravens Club.

I tried their new grilled quail entrée with cooked plums and red onions. It was really good! This was my first time trying quail and I’m a fan. I can imagine it must take a bit of finesse to cook properly, and this seemed to be, as it was still juicy and flavorful. I really liked the smoky grilled flavor, especially when paired with the subtly sweet fruit and onion.

We also enjoyed some cheese and charcuterie (my fave), and a couple cocktails.

Saturday, October 11: Pizza! We grabbed a pizza before attending the Michigan football game.
