Sunday, November 23: Blackened Salmon, Green Beans with Sherried Mushroom Sauce, Butternut Squash.

I absolutely love this green bean recipe. It’s a grown-up green bean casserole.

Monday, November 24: Bobby’s Goulash.

The lucky huz had the week of Thanksgiving off work, so he made dinner for a couple nights, which was a nice help. This goulash is one of his specialties.

Wednesday, November 26: Bdub’s to celebrate the eve of our four-day weekend.

Saturday, November 29: Cod in Sesame-Ginger Broth with Edamame and Bok Choy (Cooking Light)

This nice light dish was much needed after lots of holiday indulgence. The broth was killer, but overall we thought the dish was just okay. We didn’t love it.

Monday, December 1: Sausage and Kale Sauté with Polenta – another solid Cooking Light Recipe.

Tuesday, December 2: Chicken Fattoush – take-out from Zamaan Café. This is a great entrée salad.

Wednesday, December 3: 20-Minute Chicken Enchiladas.

I’m always amazed by how quickly these come together.

Thursday, December 4: Italian Sausage Minestrone. My go-to tried and true minestrone recipe.

Friday, December 5: Sockeye Salmon, and Kale Salad and whole grains from the Whole Foods hot bar.

Saturday, December 6: Homemade pizza.

Local, Tecumseh-based company Easy Artisan kindly gifted me a few samples of their products to try and the huz and I assembled a homemade pizza using their Tuscan Herb Flatbread & Pizza Crust Mix.

It turned out fantastically and I was super impressed by how quickly and easily the dough came together. Just add water, mix it up, place the dough it on an oiled pan, flip to oil both sides, spread the dough out, add your toppings and bake. Super simple, no mess, and really delicious – all made with wholesome ingredients. (Find their products at many stores across Michigan, including Whole Foods and Kroger.)
